So, what exactly is a superfood? While there isn’t a specific criterion a food must meet to be considered a superfood, the term is typically used to describe healthy all-natural foods that are nutrient-dense and low in calories. And sure, there are plenty of ready-made superfood soups you can buy from the grocery store, but making your own allows you to customize the recipe, use fresh, organic ingredients, and can be much less expensive than pre-made soups. Also, most soups tend to be high in sodium, so homemade lets you control your salt intake a bit more.

Chickpea Curry Superfood Soup

This plant-based superfood soup is loaded with energy-providing ingredients. Superfood Chicken Soup

Chicken soup is always a win if you are feeling under the weather or just need a boost of healthy comfort food. This recipe adds in superfoods ginger (good for digestion), turmeric (antioxidant and anti-inflammatory), and kale (antioxidants, vitamins, and beta-carotene). Not only is this soup rich in vitamins and nutrients, it also contains protien from chicken and chickpeas. With only 30 minutes to prepare, you should be feeling your best in no time after this delicious immune system-boosting superfood soup. 

Pumpkin Superfood Soup

Nothing says the fall like a bowl of delicious pumpkin soup. Made with a fresh sugar pie pumpkin along with a comforting blend of cinnamon and sage and a drop of sweetness from maple syrup, this superfood soup will definitely satisfy your fall cravings - while helping to boost your immune system! Pumpkin is considered a superfood as it’s loaded with disease-fighting nutrients including vitamins C, beta-carotene, vitamin E, iron, and folate - all of which, studies have found, may aid the immune system. And with added veggies including carrots, celery, and onions, this is a great superfood soup and a must-try for any pumpkin lover.

Quinoa Superfood Soup

If you’ve never had quinoa, your body might be missing out on one of the best superfoods around. Quinoa (pronounced ”KEEN-wah”) is an ancient grain that people in South America have eaten for thousands of years. This versatile seed is a complete protein that will keep you full for longer and is loaded with fiber, which is generally good for digestion and can help to reduce the risk of colon cancer. Quinoa is also a great source of B vitamins, folate, iron, and magnesium (which may be able to lower your risk of diabetes). This recipe only takes 15 minutes to prepare and packs a healthy dose of quinoa and numerous veggies. Feel free to add any other veggies you have in your fridge to this one or toss in some cooked chicken or turkey - the nutty flavor of quinoa pretty much goes with anything!

Mediterranean White Bean Soup

Here’s an easy recipe for a delicious gluten-free superfood soup that’s made with vegetables and protein. This hearty vegan soup packs 15 grams of plant-based protein per serving and is low in fat. White beans are loaded with fiber and protein and a good source of micronutrients including folate, magnesium, and vitamin B6. White beans are also naturally creamy, which makes the soup rich without adding dairy. You can make it extra creamy by stirring in some cashew or coconut milk and top with grated parmesan cheese for a little extra zest!
